GREEK BEEF STEW (Stefado)

3 lbs. stew meat
Salt, pepper
1 stick butter
1 lb. sm. onions
1 can tomato paste
1/3 c. red table wine
2 tbsp. wine vinegar
1 tbsp. sugar
1 clove garlic
1 bay leaf
Brown meat in butter. Arrange onions over meat. Mix other ingredients and pour over meat and onions. Cover with plate to hold onions together. Simmer for 3 hours. Do not stir. Serve with wine and sesame bread.
